Barro Negro Background 

Colombian black cookware is widely used throughout South America and can be found in many of the top restaurants. 

Handmade in the Andes, Colombia, this clay cookware is produced using ancestral and inherited traditions. Having stood the test of time over 700 years of Pre-Colombian and Pre-Hispanic cookery, history has established the product as perfectly developed, as it remains practically unchanged, yet even now successful and durable.

As the cookware is so durable - it's often passed on from generation to generation, whilst still looking timeless. 

All the cookware is moulded into shape by hand rather than spun on a wheel. A finer layer of clay is then applied as a glaze. After an initial aeration stage it is then allowed to fully dry in the sun. The beautiful black sheen is achieved by intricate burnishing of the clay before it's fired. 

The pots are fired in large earth kilns. Towards the end of firing a mix of dried herbs and grasses is added which burns quickly and enhances the distinctive black colour of the pots. 

This production technique means that patches on the surface may retain their original terracotta colour. 

As word of mouth spreads amongst the ‘early adopters’ more and more people from top chefs to amateurs are catching on to the unique versatility of these products.

Quality

Durability and dependability have been proven by a product that hasn't really changed in centuries. 

Moulded into shape by hand rather than spun on a wheel creates an in-built quality checking process during production.

It's more than just pots and plates - it'll help you turn cooking into entertaining. 

From heat to eat 

The top is cool, while the bottom is hot. You can literally take it from the hob without an oven glove (but do check just to be sure). 

Just what you’ve always needed for curries, chillies, casseroles, stews, soups, etc. etc. 

The pots will remain warm for up to 1 hour after removal from the heat source. This allows food served at the table to still be warm enough for second helpings! 

Flavour 

It's regularly agreed by top chefs that clay pots give a distinct, unique, enhanced flavour to food. 

This is because the 'firing' process leaves the pottery slightly porous. As a consequence of this, every time you cook with a clay pot, some of the natural salt and sweetness in the clay blend with the already absorbed flavours from previous dishes to add to the depth of taste for future meals. 

Versatile 

The pots can be used safely with all cooking and cleaning environments. From an Aga to an oven, ceramic to gas. From a barbeque to a microwave, under the grill or even on a bonfire. 

Better than all this versatility is that it can be easily cleaned, especially if in a dishwasher! 

Keep Liquids Cool 

If used for storing cold liquid, especially in hot climates it’s ideal, as the pottery is slightly porous, and any that percolates out evaporates and keeps the liquid inside cool.

Barro Negro Instructions 

Prior to use: 

For the best performance of your new cookware and to create an effective seal: 

- Clean with washing up liquid and water 

- Fill 2/3 full of water and place in oven for 30 minutes on 200C, gas 6 

- Or soak the pot, towel dry then rub the internal surface with cooking oil 

- Best results are achieved once used 4-5 times after cooking. 

Taking care of your new cookware: 

- Try to avoid very cold liquids being placed in very hot cookware 

- The cookware will continue to boil up to one hour after removing from heat if a lid is used 

- If the food is burnt or stuck to the pottery, soak for a couple of hours and use a nylon scouring pad to remove 

- Use wooden rather than metal utensils. 

Be Aware: 

- As the pottery is slightly porous, it should be placed on a saucer if used for storing liquid, especially in cold climates. In hot climates it’s ideal for storing liquid as any that percolates out evaporates and keeps the liquid cool.

This is due to the high cost of packaging and posting of fragile items. 

This price is for UK delivery only, which includes all postal areas in England, Scotland, Wales, Northern Ireland and the Channel Islands. 

We can deliver to the Republic of Ireland, however there may be a small additional charge (please telephone or e-mail us for a quote) and please be aware that deliveries to the Channel Islands and the Isle of Man may be delayed by customs. 

For overseas orders our rates are very competitive, we will quote delivery charges on receipt of your order.
